Vegan Gluten Free Coconut Mimi's Mini Cookies

Mimi's Minis were created by our founder Mimi, so she could snack on cookies all day long. Cookie size is about 1-1 1/2 inches so the name fits and these little bite sized cookies are perfect for snacking anytime of day. Vegan, gluten free, soy free and coconut flavored - what more could you want? Mimi's Minis are a butter cookie so they are crisp, buttery and sweet. In this case "buttery" is in quotations, because these are vegan. 
Cookies come packaged in two bags of about 1 dozen cookies each, at least 2 dozen total (maybe more!) Store in air tight container at room temperature (or just zip up the bag they came in).
